Asian Skillet Dinner

This is a super easy variation on other skillet dinners I've made, and packs in a lot of vegetables with little effort. Prep, cooking, and clean up are quick and simple, so you'll be enjoying a healthy dinner in no time.


Although I have made the marinade from scratch in the past (grated garlic and ginger, soy sauce, sesame oil, crushed pineapple, and sesame seeds), I was having a week that had more to-do's than hours. Another words, real life. The edamame were already shelled, the snow peas went in whole, (though you may want to cut them in half for easier eating) and I used frozen pineapple chunks, so the only thing I had to chop were the peppers and scallions. Cook the ground meat, pour hot water over the noodles and let it sit while you cook the rest and wash & dry the lettuce leaves. This comes together quickly, so it's best to have all your supplies ready to go. All that's left is to sit down and enjoy another healthy delicious dinner victory!
