Easy Fall Flavored Breakfast: Slow Cooker Pumpkin Pie Steel Cut Oats

If you haven't yet dusted the cobwebs off your slow cooker, it's time people! Using your slow cooker will make your morning easy and delicious because you can start breakfast before you sleep and wake up to the delightful smell of pumpkin pie. All you have to do is put it in a bowl and add your favorite toppings, and smugly enjoy it, knowing that you barely lifted a finger and you've solved the "how to make time for healthy breakfast" conundrum. Look at you, you genius!


  • I have an older oval 6 quart slow cooker and cook this on low for 7-8 hours, but your cook time may vary.

  • If you have a high sided casserole dish that will fit inside your slow cooker, BY ALL MEANS, USE IT, along with a water bath! You will thank yourself when you don't have to let your crock soak for hours to get the oatmeal unstuck, and you will waste less of this deliciousness.

  • The last benefit from using the water bath method is that you can simply cover and stick the leftovers in the fridge. Another brilliant time saver!
