No need to waste time and money on a mega muffin from your local coffee haunt. Here's a healthy option that you literally throw together before bed and you can grab as you dash out the door.

The recipe is flexible, so you can customize it just the way you like. Berries pair well with almonds, apricots are lovely with pistachios, bananas love walnuts, and pecans are a great match for peaches. Let your tastebuds and your creativity decide.

If you don't drink cows milk, this works well with whatever substitute you use. I like to use a wide mouth mason jar for this recipe, but you can use any type of container that has a secure lid.
