Holiday Baked Oatmeal

Updated: Apr 30, 2020

Are you feeling holidazed? Make this baked oatmeal! When you pop this baby in the oven, the warm wintery spice that perfumes your house will cheer you enough to take the edge off your holiday stress.

This is a healthy carb, make ahead option to keep you and your family deliciously well fed during the hectic holiday season. It also comes in handy when you're hosting a houseful of guests. Top it with some plain Greek yoghurt and some walnuts for more protein and healthy fats. If you're want to impress your guests or just treat yourself (hint: a small ritual of self care will go a long way when you're doing all the holiday things), you can grate some orange or clementine zest over it all.

You don't need much sugar for this because of the applesauce, and if you can come by some Muscovado sugar, I highly recommend it. The dark molasses-y flavor is a great match for the spices and elevates the whole thing. Dark brown sugar is your next best bet. If you've been eating lots of refined sugar (holiday cookies!) lately and prefer a more natural sweetener, try substituting maple syrup.

What are you waiting for?! In the words of Eloise At Christmastime (which my daughter and I watch every year at this time), make this, "for Lord's sake!" In the words of Nanny, you will "love, love, love" it!

Happy Holidays! Don't be a Scrooge and keep this good stuff all to yourself. Share on social media! And no need for FOMO - sign up for my newsletter here so that you'll never miss the latest and greatest recipes, fitness tips, and more.
