How to Get More Veg: Breakfast with a little help from Trader Joe's

I was talking with a fellow trainer the other day and we were saying that it's hard to be consistent with daily veg, especially at breakfast time. Sure, veg omelets are great, but who has time or desire to saute vegetables in the morning? Well, if your tastebuds like a kick of spice first thing in the morning, this is an easy solution if you have a Trader Joe's in your neck of the woods:



This is especially perfect for you when you are experiencing, "I'm Trying to Eat Healthy; My Family, Not So Much" (for more ideas on what to do about that, read this). It's delicious and also happens to be pretty healthy. The ingredients are all things you'd recognize: tomatoes, onions, bell peppers, tomato paste, olive oil, garlic, cilantro, salt, paprika, spices. If you're feeling daring and want to add a bit more, you can embellish with baby kale and parsley, or whatever greens and fresh herbs you have on hand - mint or fresh cilantro work well too.


Yay for healthy breakfast in a hurry!
