How To Get Your Greens - Pesto Recipe

Maybe you're less than thrilled with kale and other dark leafy greens, even though you know they're good for you, you should be eating them more, yadda yadda yadda. Or maybe you're already a kale lover, but you're family protests rather loudly at the mere mention of the word. This pesto can be our little secret. I guarantee that once they've eaten it, you will never even remember that we had this kale discussion.


This is super versatile flavor booster, so don't stop at pasta. You can make almost anything taste like summer by adding a little pesto! Take a couple of tablespoons and thin out with a little oil or water, then add to ground turkey to make a wonderful pesto burger. Drizzle a little over grilled chicken or vegetables to elevate your dinner to a whole new level! Want to liven up your morning eggs? Add some pesto! Making some sandwiches for a picnic? Use pesto instead of your usual condiments. Add a few tablespoons to a dollop of greek yogurt, and you have a delicious dip for veggies. If you have another idea, share it in the comment section.

If you don't have a food processor, or feel like taking it out, you can make this in a blender or smoothie maker, though the consistency won't be quite as fine. If I'm making a batch and don't need it immediately, I divide it up into 3 or 4 parts, and freeze in individual bags. It quickly thaws in a bowl of hot water. When you come home from vacation, you will have a delicious way to turn some canned tuna and frozen veg into a delicious and healthy meal. And who doesn't love that kind of everyday victory?!
