Meal Solutions for Summer Heat: Delicious, Adaptable Bowls

As we head into summer, there is suddenly a glut of all kinds of fresh produce. The only problem is, no one wants to heat up their kitchen when temperatures and soaring, and not everything is appealing in raw form. Also, is it just me, or do the people around you seem to be a bit more fussy as the temperature rises?

Luckily there is a simple way to deal with this:

Though my family did give me this fridge magnet for a past Mother's Day gift, I am, of course, only kidding. Well, kind of. But perhaps a more civilized way to put it is:

assemble your own bowl. With some brief cooking, or better yet, simply opening a can, you have the base for a delicious and healthy meal. Below are 3 recipes with slightly different flavor profiles and some ideas for swaps that mean that everyone gets to chose their dinner with little to no effort on your part. After all, the chef could use some summer R&R.

Step 1

Start with a base of your favorite salad greens (or not), then add one of the following:

Step 2

Add some protein and more vegetables. After all, the more add-ons, the further this will go, and the less cooking you'll have to do. Here are a few ideas for the protein: grilled chicken, shrimp (pre-cooked), tuna, tofu that marinates with the salad. And for more veg you could try: sliced tomatoes, green beans, asparagus, shredded carrots, shredded cabbage.

Step 3

Add your toppings:

grated, crumbled or chopped cheese, springs of fresh or some finely minced herbs, a squeeze of lemon or other citrus, lemon or other citrus zest.

Bonus: Impress you friends and family with these at your summer pot luck gatherings. They'll be even more impressed with your sheer genius when they learn how simple it is to a make.
