We all have different tastes, but everyone yearns for some comforting foods during the dark, cold days of winter. Problem is, the usual suspects may feel too much after the overindulgences of the holiday season. And speaking of the holidays, perhaps you feel like you've seen more than enough of your kitchen in the last month. Not to worry, you can make something that requires minimal effort, is ready in a reasonable timeframe, and tastes good while also being good for you. And bonus, it uses inexpensive staples that you may already have stocked in your pantry and fridge.

This soup is a perfect example of yes, you can have it all: delicious and healthy, easy and quick, and budget-friendly. Depending on how proficient your chopping skills are, you can have this on the table in about 30 minutes. If you're really feeling lazy, look for pre-chopped aromatics such as onions, carrots, and celery. It is totally customizable to use what you like and/or have on hand. You choose the types of frozen veg and the seasonings, making this completely your own, and can change it up for the next batch.
