And bonus, it uses inexpensive staples that you may already have stocked in your pantry and fridge.


This soup is a perfect example of yes, you can have it all: delicious and healthy, easy and quick, and budget-friendly. Depending on how proficient your chopping skills are, you can have this on the table in about 30 minutes. If you're really feeling lazy, look for pre-chopped aromatics such as onions, carrots, and celery. It is totally customizable to use what you like and/or have on hand. You choose the types of frozen veg and the seasonings, making this completely your own, and can change it up for the next batch. It makes a generous amount for a crowd or leftovers (aka no cook supper or lunch), and can be frozen, giving you all sorts of options. Your future nourished self will thank you!
