One Pan Roasted Fish & Cherry Tomatoes

This is an easy weeknight supper from NYT Cooking that comes together in a flash. If you want to round this out a bit, you could steam some green beans and make some rice (or much easier: microwave some frozen rice.). Feeling like you want to add even more healthy goodness? Add some baby kale to wilt at the end of cook time.


Roasting the tomatoes brings out their sweetness, whether it's tomato season, or not. So, make this any time of year, whenever you need an easy solution to staying on track with healthy eating.
