Quick & Healthy Vegetarian Comfort Food

Most comfort food recipes tend to be multi step, take a long time to prepare, and don't generally fall into the healthier category. This recipe comes together easily and quickly and is healthy and delicious!

I need to put in a plug here for the mighty mushroom. They’re a good source of the B vitamins including niacin, riboflavin, and pantothenic acid as well as minerals like selenium and potassium. The B vitamins play important roles in energy production, the synthesis and repair of DNA and RNA, carbohydrate, protein and fat metabolism, and maintaining a healthy nervous system. If you're lucky enough to buy locally cultivated mushrooms at your local farmer's market, ask your farmer if theirs are exposed to sunlight, which would also give you a dose of vitamin D.

A friend made this and it was so delicious, I asked her for the recipe. The original comes from the website Serious Eats. It's a great option for a meatless meal, or you could add some cooked chicken or turkey sausage, or shrimp, if you prefer. If you want to bump up your vitamins and minerals even more, add a handful or two of greens at the end of cooking, until they're just a bit wilted.
