Ahhh, post vacation bliss. Until it all comes crashing down when you arrive home, everyone's starving, and the last thing you want to do is a grocery store run. You can arrange in advance to have groceries delivered, but if you haven't planned that far ahead, these pantry staples can be a lifesaver for that first night home. And this is no one trick pony, it's the kind of healthy delicious meal that you can put on repeat throughout the warm weather, swapping out ingredients to keep things interesting. Just start with the grain and artichokes (and marinade) and let your taste buds be your guide. Now you've got at least one back pocket dinner solution for every week of the summer, making you smart and healthy!

Swap orzo (or other small pasta), quinoa, farro, barley, etc. for the Harvest Grains ; you can find pre-cooked pouches of quinoa and other grains at Target or check your local grocery store

Swap any canned bean and/or or pre-cooked lentil for the Garbanzo beans

Swap canned chicken for the tuna

Swap a milder olive for the Kalamata
