Slow Cooker Chicken Balti

Slow cookers are generally wonderful for their convenience, but when I'm looking for new recipe inspiration and I come across one that tells me to cook my food before the slow cooker cooks my food, I feel like this:


Yes, I am using a slow cooker for convenience, but if I'm being totally honest, come winter time, I want to come home end just enjoy a healthy dinner without a a bunch of things to wash up, so I can hibernate with a good book or binge-worthy series. Slow cooker recipes seem to fall into 2 camps: set it and forget it = so-so meal, or sweat your aromatics and brown your ingredients = a multiple layers of flavor meal. This recipe is a welcome compromise. You use your microwave to enhance flavors without extra work or a lot of extra cleanup. A little bit of chopping, and an extra (preferably dishwasher safe) bowl, and you've got a really delicious dinner. Roast some veg at high heat during the last half hour of cook time, and you're balanced meal is complete. Plus, depending on the size of the crowd you're feeding, you may have leftovers to enjoy in the near future, or freeze for a future meal hero moment.
