Slow Roasted Salmon

I usually cook fish quickly at high heat, but this is an alternative that keeps the fish moist and tender, with little risk of overcooking. Add a quick cooking veg, like asparagus or broccoli, and you can throw them both in the oven and be enjoying a delicious healthy dinner in about 30 minutes.

I found this recipe on Bon Appetit, and reduced the olive oil a bit, but otherwise it was perfect as is. If you don't like fish, I'm sure you could adjust the cook time and substitute chicken thighs or breasts. The salsa adds such a refreshing bright note, it's a welcome addition to elevate your dinner for very little effort. It comes together quickly enough that you can make it while you're cooking the fish and still have time to sit down and catch your breath.
