Super Fast Dinner: Shrimp & Broccoli

Do you like shrimp? Do you like broccoli (or broccolini)? You know those nights when you just don't feel like #adulting and have no good plan for dinner? This is for those. A few simple ingredients and a sheet pan, and you will be sitting down to a flavorful and healthy delicious meal in 15 minutes!!


This has to be the quickest dinner I've ever thrown together and is now my go to when I'm feeling utterly unmotivated to cook. Shrimp is always a quick solution, and I usually have a frozen bag on hand. But if I'm being completely honest, I have never gotten my defrosting technique down in a way that results in a consistently good shrimp texture. And I am a texture person! So when I I happened upon a recipe on The Kitchn that said that you can cook raw shrimp, right from frozen, AND it tastes good, I was like, "WHAT?!" and then, "Could this be the Holy Grail of good shrimp texture I've been searching for?!" Only one way to find out. My dear friends, the result is this recipe, which I strongly encourage you to add to your repertoire of quick weeknight dinners. It's pure magic on those nights when it feels like a struggle just to get something on the table that remotely resembles a healthy meal. I promise you that it brings the flavah and makes you feel good too.


If you like a little heat, you'll definitely want to add the crushed red pepper. I used about 2 tsp., and it was enough to give it a kick without overpowering the other flavors. I've tried both broccoli & broccolini, and either work well. If you don't have an orange, any citrus you have on hand would work. It is fabulous with a blood orange! Final thoughts: We are teetering on the edge of summer, and I am planning on trying this on the grill when it's too hot to consider fiddling with the oven.
